Here’s a step-by-step process for making Bread Pakora by Sanjeev Kapoor at home:

Step 1: Preparing the Stuffing

  • Start by peeling your boiled potatoes. Once peeled, either mash or grate them and place them into a bowl. Proceed to add your dry spices, finely chopped green chilies, and freshly cut coriander leaves. 
  • Stir the mixture until it’s well combined. Give it a taste and adjust the seasonings as needed. Your flavorful stuffing is now ready.

Step 2: Preparing the Batter

  • In a large bowl, combine 1 cup of gram flour, one tablespoon of rice flour, a small amount of baking soda, 1/4 teaspoon of red chili powder, and a pinch of salt. 
  • Gradually add water (approximately 1/2 cup + 3 tablespoons) and stir until you have a smooth batter.

Step 3: Frying the Pakoras

  • Take a slice of bread and evenly spread your prepared stuffing over it. Be careful not to overfill. Place another slice of bread on top and press gently. Cut the stuffed bread diagonally to form two triangular pieces. Repeat this process with all your bread slices.
  • Now, heat oil for deep frying over a medium flame. Dip each piece of stuffed bread into the batter, ensuring it’s evenly coated on all sides. Carefully slide the coated bread into the hot oil.
